Low-Roasted sweet potatoes — slice sweet potatoes into 1/2 inch rounds. Brush both sides with olive oil. Sprinkle generously with salt and pepper. Roast at 350 for 30 minutes, turning once. Raise temp to 400. Roast 15 – 20 minutes until golden brown
