RECIPE:
Strawberry & Apple Compote with Granola Crumble

You will need:
Quinoa
Coconut Yoghurt
Punnet Strawberries
4 Apples

Blanched almonds
4 dates
Ginger
Cinnamon
Vanilla essence
Rice Malt Syrup

Method
Coconut Quinoa
Boil quinoa and set aside (THOROUGHLY wash quinoa before cooking to avoid poor digestion)
When quinoa has cooled, mix coconut yoghurt through quinoa

Strawberry & Apple Compote
Cut up strawberries and apple and add to saucepan with 1.5 cups of water, 1 tbsp rice malt syrup & 1 tsp vanilla essence. Bring to boil then simmer on low heat for 30-40 mins. Cool and refrigerate.

Granola Crumble
Blend 1/2 Cup NutiiBoost, Dates, 1/2 Cup blanched almonds, ginger and cinnamon in a blender until mixture turns into a crumble.

To serve. Layer coconut quinoa, compote & crumble in a bowl or cup. ENJOY!
