Keto egg muffins.
One of the best time-saving keto breakfasts of all time, hands down. Delicious, savory egg muffins are convenient, easy to make, and perfect for on-the-go adults and kids! Make ahead of time, and revel in your preparedness!.
Ingredients.
1. 6 eggs.
2. 1 scallion, finely chopped.
3. 5 oz. air-dried chorizo or salami.
4. 3 oz. shredded cheese.
5. 1 tablespoon red pesto or green pesto (optional).
6. salt and pepper.
Instructions.
1. Preheat the oven to 350°F (175°C).
2. Chop scallions and meat.
3. Whisk the eggs together with seasoning and pesto. Add the cheese and stir.
4. Place the batter in muffin forms and add bacon, chorizo or salami.
5. Bake for 15–20 minutes, depending on the size of the muffin forms.
