Gluten Free, Vegan Chocolate Chip Cookies (Soft and Tasty!)

We all love chocolate chip cookies right! Here’s how to make them gluten free, vegan, refined sugar free and soy free! The are soft, super tasty and they won’t last long 🙂 Recipe below:

Recipe:

Preheat oven to 350 degrees F.

Line 2 baking sheets with parchment paper.

3/4 cup organic cane sugar
1/2 cup softened coconut oil
2 cups gluten free flour blend (I use Bob’s Red Mill 1 to 1 Baking flour)
1 teaspoon gluten free baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1/4 cup coconut milk
2 teaspoons pure vanilla
3/4 cup Enjoy Life vegan chocolate chips

Beat/cream coconut oil and sugar. Add vanilla. Mix in flour, baking powder, baking soda and sea salt. Add coconut milk and mix thoroughly. Add chocolate chips.

Roll dough into balls, place on baking sheets and press down lightly. Bake 10-12 minutes or until slightly golden brown.

Let cool and store in an airtight container.
