(this curd rice serves two)
ingredients:
1 1/2 cups cooked rice
2 medium carrots, grated
1/2 cup thick homemade curd or as needed, you can add more curd if you like thinner consistency.

raw peanuts: 1/4 cup
ginger: 1/4 inch, sliced finely
green chilies: 1-2, chopped
whole red chilies: 1
shallots: 4-5, chopped
curry leaves: a sprig
kayam: 1/4 tsp
mustard seeds: 1/2 tsp
fenugreek seeds: 1/4 tsp
channa dal: 3/4 tsp
urad dal: 3/4 tsp
salt to taste (I used pink Himalayan salt)
2-3 tbsp pomegranate seeds
chopped coriander leaves to garnish
