For the yogurt sauce:

For the quesadillas:

1 medium onion, coarsely chopped

1 clove garlic, minced

1 jalapeño (fresh or jarred without sodium), halved, seeds removed, finely diced

8 oz leftover skinless turkey, coarsely chopped

1 cup no-salt-added black beans, drained

1 tsp ground cumin

1 tsp dried oregano

2 cups baby spinach, coarsely chopped

1/4 tsp salt

1/8 tsp ground black pepper

1 cup Monterey Jack cheese, shredded

4 8-inch low-carb whole-wheat flour tortillas
